QuesaDolla Dolla Bill Ya'll

I outdid myself once again.

But this time it worked out in my favor and I didn't have to eat leftovers for the next ten meals. In lieu of the Superbowl, I attempted two kinds of dip and some quesadillas. I wasn't in the mood for cooking the typical Superbowl friend chicken, and was craving some meat and veggies between a tortilla wrap (as if I haden't gotten my fix of Boloco every week for the past three weeks).

The groceries this week cost about $30, and consisted of a lot of fruits and veggies, including a whole pineapple! I began the night with a whole lotta chopping. Cucumber mango, pineapple, onion, spinach and artichoke hearts. But with a sharp knife in hand, I love the practice. The cool part about the recipes I picked out for this week was that after the prep, all the ingredients were mixed together. Except for the quesadilla. That would just be silly.







The spinach artichoke dip was divine, so totally worth splurging on a jar of artichoke hearts. Y'know, artichokes were my all time favorite veggie growing up as a kid, and I just recently realized that they're a pretty pricey vegetable. I must have good taste or something. Anyways, I made two pyrex bowls of dip - we ate one that night and I brought the other to our first monthly Supply Chain/Contracts Management potluck (affectionately named Supplontracts Chainagement). The first potluck was deemed an absolute success and we concluded that the next potluck should have a theme. Supplontracts is the best - we even have a cans 4 plants initiative - saving soda cans to buy plants to liven up our workspace! Yeah, we're the most adorable section of the office.

The mango salsa was only so-so, because unfortunately I was a wimp when it came to spicing it up. I even bought a jalapeno  cut it up, and used none of it. I don't think Italians are born with that gene that makes you like extra spicy foods. The quesadillas were awesome, as quesadillas always are. Overall, fairly easy recipes, but I'm glad they're now off of the list of "things to cook".
