Greek meatballs, hold the greek



Kind of a fail cooking-wise this week. partially because it was the third night of my cooking marathon, which began on Sunday with lemon ricotta cookie making (see previous post). On Monday night I finished up the tortillas from the enchiladas, which have now lasted me all week and then some. My attempts at eating everything in my cabinets are probably going to be futile, as every week I am still buying food to use up other food that is stashed away in my cabinet. For example, I bought whipped topping and strawberries to make strawberry whipped cream pie using the graham cracker pie crust I already had, which definitely costs more than the pie crust itself, but it makes me feel resourceful to use up what I bought in bulk awhile back. 

The greek meatballs pretty much just came out as regular meatballs, as I didn't find a recipe for the traditional yogurt and cucumber sauce until I was wrist deep in meatball making. I took the less risky approach and like how my parents cook it, baked the meatballs in the oven for about 45 minutes. It felt nice to redeem myself after attempting to cook Hannah's famous pineapple onion meatballs (see other previous post). If you'd like to try making these flavorful meatballs, google "keftedes recipes" and you'll find a bunch of recipe suggestions. The more I use recipes, the less I follow them strictly. I'm becoming more daring in the kitchen and loving every minute of it! Nothing like paddling on a dragon boat for an hour and a half, then spending another hour preparing dinner once I've gotten home. Food tastes the best at 10:30 pm when I'm starving and have slaved over it!



Also, I've decided to ramp up my posting by posting every Wednesday (or some other arbitrary day), hopefully around lunchtime if I bring my connecter cord to work. Definitely can't promise that this will occur all the time, but I'm hoping to get a few more followers and credential points for updating regularly instead of whenever I feel like it. Jenna Marbles posts every Wednesday and she's probably as busy as a front line cook, so why I can't I do the same? I've heard of cooking blogs being sponsored by restaurants (read: free food) and I think that would be a realistic goal to get a few sponsors in Boston, resulting in positive publicity for themselves and myself! Love me some win win situations.



Also, this is my new favorite thing. It's great for the 30 second breaks I give myself when I feel like my head is about to explode at work. Yayyyyy busy summer season! I think i'm going to get all verklempt when the puppies are old enough to be adopted and thusly this video project comes to a close.
