Well, the day has finally come. I finally failed at a recipe. And of course I followed the recipe perfectly and was so excited I had all the ingredients in my cabinets already. I was going to make Hannah's fabulous turkey pineapple onion meatballs, substituting beef for the turkey meat. The beef that wasn't used in the meatloaf I made earlier in the week so I was all excited to try a new recipe using some leftovers. The recipe called for sauteeing the meatballs in a pineapple-soy-brown sugar (which I'm beginning to believe is a commonly used thickener) mixture, but the meatballs couldn't keep it together and ended up crumbling into a taco meat consistency. I think this was partially due to the fact that I was using 80% lean meat, and therefore the balls were too moist (that's what she said?). Balls.
However, the final product was still delicious and somewhat nutritious, and lasted quite a few more meals than what I originally intended to make. The next night I made a quick stop for some burrito wraps and spinach, and I had these delicious wraps all week! A pound of meat goes a long way. Thankfully this was the one time I decided to try a dish without my resident taste tester, Eleni, so the only one that succumbed to eating ramen the night I set out to cook meatballs was me.
