Two steps forward, one step back

Kind of took a step back by cooking sheperd's pie this week. It was SO so easy to make. It didn't even seem necessary to use a recipe, as it is pretty much all intuitive as to how to make it. Cook onions, boil potatoes, cook veggies and meat, mix veggies and meat and onions all together, put in a deep dish, top with mashed potatoes. A bit of butter here, a bit of salt, pepper, and thyme there. And BAM. There it is.

The flavors were all there, and there was enough for leftovers! About a $8 dinner for 3 or 4 servings. It's dishes like these that make me wonder why I didn't cook like this in college, takes a tad longer than pasta and tastes twice as good. Silly me. Maybe this is just what I experienced, but it seems like college students, myself included, are full of excuses as to why we couldn't eat healthy. Busy schedules, no money, etc. College is definitely a time to go out and eat with friends, so it makes sense that we bought preservatives and rarely frequented the grocery store. Our stomachs and pockets would have greatly benefited from taking a few "College cooking 101" classes. Just sayin'. I could make millions by starting a travelling cooking class workshop. No one steal that idea, por favor.

Also, take my advice and don't buy a large watermelon just because it is on sale. WAY too much for one person to eat. Especially when you have free food and starbucks at work all week due to audit insanity. I forget what hungry feels like. Therefore, won't be cooking a dinner the week of 7/2, as I would like to eat all of my leftovers. The starving children in third world countries make me not want to waste anything. 

Also, visited a beach I've passed by while riding the T. Right across the water from the arrival and departure runways to the airport, so so so awesome! Except I'm now a beach snob and the sand there is too big and rough for my liking.
